On the centenary of the appearance of the Vindel Scroll, the only manuscript that keeps the secret of the original lyrics and music of the songs of the troubadour Martín Códax, Martín Códax Vindel was born. After three weeks of harvesting, a miracle occurs.
The grapes from the Agro de Tremoedo vineyard reach a unique pink colour that causes a unique aromatic complexity. By means of cryomaceration, the maximum extraction of these aromas is obtained, as well as a greater density and velvety character of the wine.
Martín Códax Vindel is the result of extreme viticulture, aimed at finding a vineyard that is not very vigorous, is very porous and has a high leaf area that results in a very low yield and the qualities of these rosé albariño grapes are unique.
The grapes selected for Martín Códax Vindel are harvested by hand approximately 20 days after the start of the normal harvest. It undergoes a cryo maceration -4/- 8ºC for 2 days, cold maceration in the press in an attempt to maximize the revelation of all the extracted aromas.
The fermentation is made at 17ºC in stainless steel and another part in new French oak barrels of 225 light toasting.
Once the fermentation is finished, the wine is batonaged in the barrel for about 4 months, then blended and aged in tanks for at least 1 year.
Finally it is stabilized, filtered and bottled.
Greenish yellow colour, clean and bright.
High aromatic intensity, with citrus notes of grapefruit, apricot and candied orange. We find notes of aromatic herbs, spices, balsamic notes and also notes of pastry/bread-making and white chocolate.
