History and presentation

Kind regards, how are my guates, I am Barbotas el Gafotas, Chief Inspector of the Royal Guard and in charge of watching over and ensuring the safety of the King.

My scientific name is Nephrops norvegicus and the Common Nephrops. We are mainly nocturnal animals.

We live at depths of 6 to 700 metres and feed mainly on marine invertebrates.

The Nephrops is a crustacean that does not stay out of the water for long, so it is rare to find it alive in the shops.

It is an exquisite gastronomic product with an exceptional taste that is increasingly valued, which is why restaurants all over the world are turning the lobster into gourmet dishes.

It has a high nutritional content, mainly proteins and minerals difficult to find in other foods of animal origin.

Of all the crustaceans, the Norway lobster is the one that provides the fewest calories.

With my long and spiny claws I will make sure that peace reigns and that there are no inconveniences in our Festival of Flavors of the Sea.

It seems that I am the only one who can bring a bit of calm and order in the midst of all the chaos on either side of the estuary because of all the preparations.

We will keep our eyes open from now until the end of the annual festival.

I will not let down my guard, after having to send real prawns to bring our most talented surfer safe and sound, I will not let those who come to play dirty get the prize that belongs to each of the seafood from our estuaries, for the unquestionable taste that we bring to the gastronomy.

The Norway lobster, also called Norwegian lobster, or crevette in French, is one of the most exquisite products that inhabit the waters surrounding Spain, since it can be found both in the North Atlantic and in the Mediterranean.

This decapod crustacean shares many of the physical characteristics of the prawn, with a slightly larger size – between 20 and 25 centimetres in adulthood – and belongs to the same family as lobsters, crabs, spider crabs and shrimps.

It lives in deep water, buried in burrows in the soft sand, from which it only emerges a few times a day to feed. This is one of the reasons why its fishing becomes difficult, which makes Norway lobster a somewhat more expensive product than other seafood.

The Norway lobster is probably one of the healthiest seafoods, as it provides very few calories and fat values while still containing a wide variety of vitamins and minerals.

To cook it, the options are as varied as your imagination allows. It can be boiled, roasted, fried or grilled. It is also a great ingredient to add to sauces and soups of all kinds.

Of course, we don’t forget the crayfish paella or the rice with crayfish, the dishes in which this seafood has a starring role.

Fortunately today, thanks to technological advances in fishing and food preservation, it is possible to buy Norway lobster at any time of the year. There is nothing better than receiving seafood at home and preparing your favourite dishes.

Although the taxonomy distinguishes countless subspecies of the Norway lobster, gastronomically speaking it is possible to differentiate between four edible varieties, which in many cases do not correspond to different animals, but to different stages of growth of the same.

Medium sized cicadas usually weigh approximately 60 grams, while pearly and fat cicadas can weigh around 80 and 130 grams respectively.

The most sought-after are the larger ones, also called trunk crayfish. These usually reach 30 centimetres in length and can weigh up to a quarter of a kilo. They are ideal for starring in rice dishes as they retain all the flavour in their flesh.
